1 egg yolk
1 cup yogurt
2 tablespoons oil or butter
1 cup flour (For GF use Pamela’s baking mixhttp://pamelasproducts.com/, that’s what I used)
2 teaspoons baking powder
1/8 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon sugar
1 teaspoon vanilla
1 egg white (beaten till stiff)
Mix all together, adding the whipped egg white last and fold in gently.
Put greased skillet on medium high heat. Wait until the skillet is hot before you pour pancake batter on. Make 5 inch pancakes.
Flip pancakes when bubbles appear. Cook an additional few minutes and serve hot with butter and maple syrup.
