Best Pancake Recipe

Makes 8 5 inch pancakes


1 egg yolk

1 cup yogurt

2 tablespoons oil or butter

1 cup flour (For GF use Pamela’s baking mix, that’s what I used)

2 teaspoons baking powder

1/8 teaspoon baking soda

1/2 teaspoon salt

1 teaspoon sugar

1 teaspoon vanilla

1 egg white (beaten till stiff)

Mix all together, adding the whipped egg white last and fold in gently.

Put greased skillet on  medium high heat. Wait until the skillet is hot before you pour pancake batter on. Make 5 inch pancakes.

Flip pancakes when bubbles appear. Cook an additional few minutes and serve hot with butter and maple syrup.

    Oh my mouth is watering! I'll have to try these...although, I usually don't do so well with pancakes...undercook or overcook. The kitchen and I aren't great friends. I try so hard, but my results don't often reflect my efforts.

    Loved reading your story today, I am guilty too about the worry about the mess more than the people, where did that come from????? I grew up in a house with 8 of us there and nothing was perfect, you walked in the front door and there were 6 pairs of shoes to walk over and dust balls in the living room but we all had fun together and never worried about it. You were blessed to have the chance to stay with this woman who knew the way to peoples hearts is through cooking!~~~~~can hardly wait to try the pancakes, and I do use pamelas and love it so these should be excellent~blessings Sue

      If you are lactose intolerant and unable to drink cow's milk then there is a good chance that you will be able to tolerate goat's milk. Goat's milk contains a lot less lactose than cow's milk. Goat's milk is also recommended if you are allergic to cow's milk. Your allergy is likely caused by a certain protein found in cow milk called alpha S1 casein protein. Both human milk and goat milk lacks this protein.a problem with it.
