Meringue Cookies

The Meringues are the white cookies that look like something is sandwiched between the two sides. Nothing is sandwiched inside, I tried to cook them in half the time so I could photograph them. Don’t rush these cookies they like being in the oven for a long time on low heat. I hope I can remember to put a new photo up soon of what they look like when you don’t bake them so fast.

4 organic large egg whites

2 1/4 cups organic powdered sugar ( making them with regular sugar is so much tastier but the organic sugar was not  ground fine enough–hence powdered sugar)

1 tsp organic vanilla

Beat egg whites until foamy. Add sugar slowly, beating continuously. Add vanilla.

Beat until stiff peaks are obtained.

Drop by large tablespoons onto a cookie sheet. Bake on 250 degrees for 2.5 hours.

Cool and then enjoy.
