Basil Chicken Pasta Salad

Basil Chicken Pasta Salad

                                                                                                     

12 oz package pasta (I use organic)

 1 lb cooked chicken (could use Rotisserie), chopped

1 cup finely chopped fresh basil

1/2 cup pine nuts or more to your liking

1 small can sliced olives
 
12 oz cherry tomatoes, sliced
 
1 cup fresh spinach, chopped
 
2 raw carrots, peeled and diced
 
2/3 cup parmesan cheese
 
1 package of Simply Organic Garlic vinaigrette dressing mix (envelope size)
 Whisk together 3 tablespoons vinegar, 1/4 cup water, 2/3 cup olive oil and packet ingredients.
 
Stir everything together and serve.
 
This is a fast meal if the chicken is already cooked and you have all the ingredients already chopped.

    What do you use when you don’t have the vinaigrette packet? Couldn’t find it this week at the grocery store.

    • Use 2/3 cup olive oil, 1/4 cup of balsamic vinegar, sea salt, fresh garlic or powdered garlic, onion powder, oregano, pepper and a little thyme. Mix and let sit for at least an hour before using.
